You know how there are some people that you just know what their candy is? My brother is one of those people. He’s always been a huge fan of Snickers and Reese’s Pieces.
He’s definitely the person that’ll show up to the movie box full of the fun fall colored candies.
I’ve always made chocolate chip M&M cookies in the past but thought it time to try out making some with Reese’s Pieces for him instead.
These peanut butter Reese’s Pieces cookies are a peanut butter lovers dream. And my brother’s.
They’re soft, fluffy, and full of Reese’s Pieces, giving them just the perfect amount of added sweetness to make them different than classic peanut butter cookies. But they also make a great traditional peanut butter cookie recipe if you want to omit the pieces!
They’re also perfect for using up any leftover candy after Halloween going right into Thanksgiving!
Why You’ll Love This Recipe
- Peanut butter flavor – if you like peanut butter, these soft baked Reese’s pieces cookies are full of so much peanut butter goodness! If you don’t, try these rice krispie cookies instead!
- No chill dough – unlike a lot of sugar cookies (including my favorite cut out sugar cookies), the cookie dough for these doesn’t need to be chilled. That means you can read this post and have these cookies ready to eat in under 30 minutes!
- Fun fall colors – I’ve always thought that Reese’s Pieces looked like fall, so these make a great addition to any of these fall party ideas, a Thanksgiving dessert spread, or really anything in the fall! Or all year round!
Ingredients
Ingredient Notes
- Butter – you’ll want to use salted butter that’s been melted and cooled.
- Peanut butter – make sure you’re using creamy peanut butter in these, the crunch will come from the Reese’s Pieces.
- Egg – I recommend using a large egg that’s at room temperature! If you can’t wait for it to get to room temperature, it’s fine, it’s just better that way.
- Reese’s Pieces – these are obviously designed to be Reese’s Pieces cookies but if you don’t like those, you could always just use this as as peanut butter cookie base and switch out the candies for semi-sweet chocolate chips peanut butter chips, or even nuts.
how to make reese’s pieces cookies
These Reese’s peanut butter cookies are super easy to make and come together quickly! Plus, they’re pretty hard to screw up but if you have issues, make sure to read my FAQs section at the bottom of this post for some troubleshooting tips!
Preheat the oven to 350°F. Line large baking sheets with silicone baking mats or parchment paper.
Combine flour, baking soda, and salt in a medium bowl and whisk together.
Now in a large mixing bowl, cream the melted butter, peanut butter, brown sugar, and granulated sugar together until smooth. You can do this by hand, with an electric mixer, or I personally like to use my stand mixer.
Add the egg and vanilla extract to the butter and sugar mixture and beat until well combined.
Next you will add the combined dry ingredients (the flour mixture from earlier) to the creamed mixture in the large bowl and mix just until ingredients are combined.
Once those are combined, stir in the Reese’s Pieces.
Using a large cookie scoop or large spoon, scoop out a heaping tablespoon of dough and roll into a smooth ball with your hands, then place balls on the prepared cookie sheet at least 2″ apart.
Gently flatten out balls slightly using the bottom of a heavy glass. Don’t press too hard or they’ll end up too thin and crunchy, not soft like you want to.
Note!
If you want to skip this flattening step to save time you can, but flattening them slightly will give you a smoother cookie texture. They’ll taste fine either way.
Bake for 10 minutes or until the edges start to turn golden brown but the middle is still soft.
Remove them from the oven and gently press additional Reese’s Pieces into the tops of the cookies while they are still hot.
The bottom of the cookie will likely still be slightly soft, so let them sit on the baking sheet for about 10 minutes until they’re cool enough to move without falling apart.
And finally, as the last step, carefully from the pan to a wire cooling rack and let cool completely.
Serve these Reese’s cookies warm or at room temperature! And you may want to enjoy with a tall glass of milk to wash down all that yummy peanut butter flavor!
My family loves enjoying these cookies with Reese’s Pieces candies, and I hope they become your new favorite cookie, especially for this time of year!
Expert Tips
Store cookies in an airtight container for up to five days. Once cooled, these stack well! Just let them cool first or you’ll end up with melty Reese’s Pieces all over your cookies and container. They also are great for filling your cookie jar!
Freeze rolled cookie dough balls on a baking sheet. Once frozen, transfer to a freezer safe zipper top bag (aka freezer bag) and freeze for up to three months. When ready to bake, bake from frozen and just add a few minutes to the bake time (take them out when they start to get golden brown).
Make the cookie dough ahead of time and refrigerate for up to three days before baking. When ready to bake, let sit at room temperature for 15 minutes before rolling the balls and baking according to the directions in the recipe card.
Mix it up by using the peanut butter base with different mix-ins other than the Reeses Pieces candies. Try them with chocolate chips, peanut butter chips, caramel chips, nuts, or even coconut. Just stick with the same amount (1 cup) of mix-ins so you don’t ruin the ratio of dough to mix-ins.
Recipe FAQs
Do I really need to use both brown sugar and granulated sugar?
The combination of the two sugars together gives you the perfect combination of sugar to get the chewy texture you want for these. White sugar typically makes cookies crispier while brown sugar makes them chewy and dense; the two combined makes for the perfect cookie. If you don’t have one of the sugars or if you just want chewy cookies, you could try just using one, it just won’t give you the best results (you may end up with cookies that are a little crisp).
Why are my cookies dry or hard?
If your cookies turned out dry or hard for some reason, check to make sure you’re using the right amount of flour (spoon it into the measuring cup then level it off instead of just scooping), make sure you’re not over mixing the dough, and make sure you’re taking them out while the centers are still soft. If you messed up any of those things, you could end up with hard cookies.
Do Reese’s Pieces have chocolate?
Unlike Reese’s peanut butter cups, Reese’s Pieces do not actually have any chocolate in them. They have peanut butter filling with a candy coating.
