I’ve always been a big fan of ice cream cakes for some reason, but I always thought they were too daunting to try and make.
Turns out I was wrong, and they’re actually very simple to make!
I made this Oreo ice cream cake a while back that’s perfect for chocolate lovers but what about if you prefer strawberry?
Then this strawberry ice cream may be one of your new favorite things! It’s full of layers of strawberry flavor, multiple flavors of ice cream, and even a crunchy Oreo crust!
It’s the perfect addition to a summer birthday party, a backyard bbq, a bridal shower during the summer months, or anytime you just need an easy ice cream cake to bring somewhere. And isn’t that really all the time?
Why you’ll love this Recipe
- Golden Oreo crust – the crust on this ice cream cake is made of those yummy golden sandwich cookies so it tastes kind of like a graham cracker crust or shortbread crust and the perfect complement to the ice cream.
- Easy – there’s nothing to making this cake other than really just making the layers of the cake and putting them together!
- Simple ingredients – you can see all of the ingredients below, but it really just uses things that are readily available not only in local grocery stores but in all of them!

- Whipped topping – cool whip or a generic version of cool whip. Make sure it’s thawed before you try to use it so it’ll spread on nicely.
- Butter – you’ll want to use unsalted butter in this recipe so the salt doesn’t detract from the sweet flavor of the ice cream cake. Also, melt it then let it cool before using.
- Ice cream – you need both vanilla ice cream and softened strawberry ice cream for this strawberry dessert. I recommend going with just something basic rather than something with a lot of mix-ins but it should be fine either way.
- Strawberries – you’ll need fresh strawberries, diced into small bite size pieces for this cake.
- Strawberry sauce – I only recommend using Coldstone Strawberry Sauce. We tried this with all sorts of various strawberry sauces and toppings and the Coldstone one was the only one that really worked without running out everywhere. If you can’t find Coldstone strawberry sauce, the next best option we found was strawberry jam (the other sauces were too thin and ran).
How to make strawberry ice cream cake
Making this strawberry ice cream cake is a cinch. You just need to make each individual layer (all easy) then put them together and freeze! It’s a bit time consuming because you’re dealing with ice cream and layers that need to be frozen but the wait for this perfect dessert is totally worth it!
1 – make the oreo crust
- Line the bottom of a 9″ springform pan with parchment paper. This will help your crust from sticking to the bottom of the pan when it’s frozen. You could also use an 8-inch pan if you want but the layers will be a little thicker.
- Crush 24 Oreo cookies in a food processor.
- Blend the melted butter in with the crushed cookies. It should be soft and crumbly but come together when you grab a pinch full of press it together gently.
Tip!
Wipe out the food processor as soon as you’re done with it (to get all the butter residue out). You’ll be using it again later in this recipe and don’t want your other cookies to be all buttery like you do with the crust!
- Take the Oreo mixture and press it into the bottom of your prepared springform pan to create the crust or base of your ice cream cake. Make sure to press it all around the bottom so that the bottom of the pan is completely covered.
2 – Add Your Filling
- Spread the softened vanilla ice cream over the crust in the bottom of your pan with the back of a spoon or rubber spatula.
Tip!
Be careful so you don’t dig into the crust while you’re spreading the ice cream or you’ll end up with holes in the bottom of your ice cream base.
- Add one cup of the strawberry sauce on top of the ice cream.
- Crush another 16 Golden Oreos in the food processor and cover the strawberry sauce with the Golden Oreo crumbs, smoothing everything out slightly so it’s not just one big clump but more of a layer.
- Place in the freezer and allow everything to freeze together for one hour.
3 – Add the Final ice cream cake toppings
- Take the strawberry ice cream out of the fridge 5-10 minutes before you’re going to finish the cake to allow it to soften.
- Add the softened strawberry ice cream cake on top of the Golden Oreo and strawberry layer, smoothing it out across the cake surface.
- Top with the whipped topping, again smoothing it out across the entire surface of the cake.
- Carefully cover the cake with plastic wrap then place in the freezer and freeze for 6-8 hours or until completely frozen together.
4 – Garnish and Serve
- Remove the cake from the freezer and allow to thaw for 5-10 minutes before carefully removing from the springform pan.
- Top the cake with 1/2 cup of diced strawberries and more crushed Golden Oreos for garnish.
- Slice carefully with a sharp knife. I recommend small slices because it is a thick cake and a little goes a long way.
- Serve each slice immediately with more strawberry sauce on the side for people to add on their own if they want to!
Tip!
If not serving immediately put back into the freezer until you’re going to serve it. It’s ice cream so it will begin to melt fairly quickly, even though they are dense layers of ice cream!

This cake is thick with various layers of ice cream and ice cream topping, so I recommend cutting it into smaller slices than you’ll see in these pictures. You’ll probably want to do about half of the size of these slices!
how to store ice cream cake
Store leftovers in an airtight container in the freeze for up to 3 months! You can also just try to plastic wrap the leftovers and put them in the fridge if you want, but it can get pretty messy to plastic wrap after it’s started to melt!
You can either store the entire cake together (if you haven’t already separated all of the slices) or you can store it in individual slices if you want to thaw a little at a time over the next few months!
Also, if you know you’re not going to eat the entire thing right away – slice part of the cake and keep the rest of it whole! That’ll make for easier freezing of the leftovers!
Recipe FAQs
Do I have to use a springform pan?
No, you do not have to use a springform pan to make this. You can also just make it in a regular round cake pan or even a square pan. If you’re going to do that, make the piece of parchment paper long enough that the edges hang over the edge of the pan. Then once the cake is frozen, gently lift it out of the pan using the edges of the parchment paper. The springform pan option is much easier but this works too if you don’t have one.
Do I really need strawberry and vanilla ice cream?
While technically you don’t need both types of ice cream, it really does enhance the flavor of this strawberry ice cream cake and give it more of that strawberry. You could just do all vanilla or all strawberry, I just like the combo of the two together!
I can’t find Coldstone sauce, what can I use instead?
I recommend using strawberry jam in place of the strawberry sauce if you can’t find the Coldstone variation. Don’t try using something like Hershey’s strawberry sauce or another thinner strawberry topping, it just runs out and you end up losing the sauce completely. We tried it with eight different options and the Coldstone strawberry sauce was the only one that worked, so I’d replace with jam (that will stay put) if you can’t find Coldstone!

Strawberry Ice Cream Cake
Ingredients
- 45 Golden Oreo cookies divided
- ½ cup unsalted butter melted
- 1 quart vanilla ice cream softened
- 1 cup Coldstone strawberry sauce
- 1 quart strawberry ice cream softened
- 8 ounces cool whip thawed
- ½ cup diced fresh strawberries
Instructions
- Line the bottom of a 9″ springform pan with parchment paper.
