I am a firm believer that boxed brownie mix makes the best brownies (but if you want something homemade, these homemade brownies are delicious). They have the perfect fudgy texture and are really easy to make! It doesn’t get much better than that.
But if you’re looking for something different than the traditional chocolate brownies, these easy strawberry brownies are equally as decadent in flavor and almost simple to recreate at home as boxed brownies.
They’re loaded with lots of strawberry flavor so strawberry lovers will go crazy over this chewy brownie.

- Strawberry cake mix – you can use any brand as long as the ounces per box of cake mix are the same. You can also switch up the flavor if you like the concept but want to try something other than strawberry. It’s also important to note that by changing the flavor you can alter the beautiful color. If you are still wanting them to be the pink color you may need to add a few drops of red food coloring.
- Fresh strawberries – these can be hand chopped or pulsed in a food processor until roughly chopped.
- Lemon juice – I like to fresh squeeze my lemons, which is a breeze with this lemon squeezer. You can also use prepackaged lemon juice without a problem but the flavor is a little more artificial than fresh-squeezed.
How to Make Strawberry Brownies
Just like with any boxed brownie mix this recipe is as simple as pour, mix, and bake. The hardest part is not eating all the delicious frosting before it makes it to the top of the brownies.
I’ve included the full recipe with pretty pictures to get you excited about the delicious treats you’ll be eating. You can also find the recipe card at the bottom of the page.
1 – Make The Brownie Batter
Preheat the oven to 350°F. Then line an 8” square baking pan with parchment paper and spray the parchment paper with cooking spray. This will not only make it easier to get the strawberry brownies out of the oven, it will also make sure they don’t stick to the paper.
Start by chopping the strawberries into small pieces. You want them to add flavor without being too chunky in the batter or turning it into strawberry puree.
Next, mix the strawberry cake mix, chopped strawberries, lemon juice, and large eggs in a large bowl and beat with a hand mixer or fork until smooth. You can do this in a stand mixer if you prefer, but it’s easy to do with a hand mixer.
After mixing the batter all together, pour the strawberry brownie batter into the prepared pan, making sure to even it out as much as possible. I like to do this with a silicone spatula so that the batter doesn’t stick.
2 – Bake the strawberry brownies
Bake the brownies in the preheated oven for 18-20 minutes or until set (to test, insert a toothpick into the middle of the brownies until it comes out clean).
Let brownies cool for 10 minutes before removing the parchment paper from the pan and placing the entire thing (parchment paper and all) on a wire rack to continue cooling.
3 – Make The Glaze
While the brownies are cooling, make the glaze. Simply combine the powdered sugar and lemon juice in a bowl with a spoon or whisk until smooth.
Lightly drizzle glaze over brownies, allowing it to run over the edges. This can be sweet, so start light and add more as desired.
Once the brownies are glazed and the glaze has cooled, cut the brownies into squares. If you want perfect squares, you can cut off the edges first like I did in the picture below or just cut them into squares with rough edges if you don’t care.
3 – Serve
Once the strawberry cake mix brownies have completely cooled, you can either put them in an airtight container to enjoy later or eat them right away.
Serve at room temperature and topped with sliced strawberries or a scoop of vanilla ice cream. I added the stem of the strawberry for some green color and pictures, but I recommend just doing a quarter strawberry without the stem so people can just dig right into these!
Expert Tips And Storage Info
You can cut the edges off if you want clean edges on all sides. Or leave them on for those brownie-edge lovers.
Add a little extra lemon juice or water to the glaze if it’s too thick or has too strong of a lemon flavor.
Store in an airtight container at room temperature for up to five days. I’d suggest removing the fresh strawberries on top when storing them so they don’t go bad before the brownie.

Should you put brownies on the top or bottom in the oven?
Brownies should typically be baked on the center rack of your oven depending on how your oven cooks. If your oven cooks hot on the top, you may want to bake them on the bottom rack to keep them away from the hottest point of the oven. My general rule of thumb is to bake brownies on whatever rack you normally bake cookies on.
How long do brownies last?
These strawberry brownies last about five days stored in an airtight container. After that, they will start to harden and dry out.

- ½ cup fresh strawberries (chopped)
- ⅓ cup lemon juice
- 2 large eggs
Glaze
- 1 cup powdered sugar
- 1 TBS lemon juice (add a few extra drops if needed for desired consistency)
