Easy Cadbury Cookie Bars
These mini egg cookie bars are wildly addictive! On their own, mini eggs are hard to resist but when they’re embedded in a soft and chewy cookie bar and you’ve got the combination of a thick decadent cookie and the crunch of candy-coated milk chocolate, that’s when we lose our ability to draw the line at just one bar. Or three!
What is it about mini eggs that are so fun and festive?
Well, they’re little candy-coated milk chocolate eggs that are a bit to small for an Easter egg hunt, but perfect for popping handfuls or using them to bake things like this easter egg cake.
They’re a seasonal Easter treat which makes them even better!
They’re super simple to make with just a few basic baking staples, and once baked, they’re like a warm chocolate chip cookie in a bar form. But instead of chocolate chips, the chocolate eggs become warm and melty and there’s a bit of crunch in every bite.
Add them to any Easter menu, Easter dessert table, or even an Easter charcuterie board!

- Butter – unsalted and softened. Bring it to room temperature about 30 minutes before.
- Sugars – I use both white and brown sugar in these Cadbury cookies for the balance of moisture and caramel flavor and sweetness.
- Eggs – it’s a good idea to have all your ingredients at room temperature for even baking and properly blending ingredients. Bring these out with your butter.
- Baking soda – Check the expiration date! You don’t want your mini egg cookie bars falling flat on you.
- Mini eggs – Cadbury mini eggs are the more widely known brand, however there are off brand mini eggs you can use, if that’s what you have.
How to make these mini egg cookie bars
These Cadbury egg cookie bars are so easy to make! You’re just going to make a cookie dough, add some mini eggs, and bake! It really couldn’t be much easier!
1 – make the cookie bar dough
Before you do anything, you need to preheat the oven to 350 degrees. Then use cooking spray and grease a 9×13 baking dish or line it with parchment paper.
I personally prefer the parchment paper method because it makes it super easy to pop the bars out of the pan to cut into even squares later!
Once your pan is prepped using the method of choice, it’s time to bake the cookie bar dough!
- Combine dry ingredients – all purpose flour, baking powder, and baking soda – in a medium mixing bowl. Set the mix aside for later.
- Add the butter and sugar to a large mixing bowl if using a hand mixer or to the bowl of a stand mixer if using a stand mixer. Mix ingredients together on medium high speed until the butter and both sugars are a creamy mixture.
- Whisk in the eggs, vanilla, and salt into the butter and sugar mixture until the ingredients are creamed togetehr.
- Turn the mixer onto low speed and add the flour mixture about 1/2 cup at a time until all of the flour mixture is added and evenly mixed into the other ingredients.
- Fold in 1 1/2 of the Cadbury mini eggs using a wooden spoon until they are mixed throughout the dough to finish off the cookie bar dough. Set the rest of the mini eggs aside for later.
2 – bake the Mini Egg Cookie Bars
- Scoop the dough onto the parchment lined pan. Use a spatula to even the batter out and press it into the baking pan.
- Evenly sprinkle the remaining eggs on top of the cookie dough.
- Place the dough into the preheated oven and bake for 25 to 30 minutes. The cookie bars are finished when a toothpick inserted comes out clean and the edges are beginning to turn a golden brown.
3 – Serve the Cadbury Egg Cookie Bars
- Once the bars are done baking, set the baking pan onto a wire rack and let the baked cookie bars cool to room temperature before cutting them into squares.
- Cut in squares right in the pan or if you used parchment paper, carefully remove the parchment paper and cut into squares on the parchment paper.
Serve either immediately while the bars are still warm or wait for a little bit and enjoy them at room temperature. They’re delicious either way.
I personally prefer them with a scoop of vanilla ice cream on top because what isn’t better with a scoop of ice cream??
How to Store Cookie Bars
These mini egg cookie bars are one of the best Easter treats because you can make them ahead of time, they store well, and they freeze well! Triple threat treats!
Make Ahead of Time
If you’d like to make these ahead of time, prepare the dough and keep it covered in the fridge for up to three days. When you’re ready, bake as directed. Avoid keeping it any longer than three days or the dough will start to dry out.

If you have leftover cookie bars, place the bars into an airtight container or zipper top bag and store at room temperature for up to three days. After three days, they’ll start getting dry and not taste nearly as good!
How to Freeze Mini Egg Cookie Bars
They cookie bars freeze beautifully! If you’d like to freeze them, wrap individually in plastic wrap (like you see bars and brownies wrapped at restaurants), and place them in a freezer safe container or zipper top bag and freeze for up to three months.
Alternately, if you don’t want to spend time wrapping them each individually (the preferred method), you can also stack them in the container or bag with a small piece of parchment paper between them to keep them from freezing together.
Expert Tips
Use different colored mini eggs. I love the pastel colored, especially around easter, but use what you’ve got.
Swap the mini eggs for different add-ins. Ok, so they’re not mini egg cookie bars anymore, but they still work! Use M&M’s, mini Reese’s cups, marshmallows, chocolate chips, nuts, etc.
For clean slices, wait until the batch has cooled at room temperature first before cutting.

Can I use a smaller pan?
You can, just know that your cookie bars will be ultra thick. Which, if you’re a fan of thick and chewy cookies, you’ll love them that way. You may need to increase your baking time as the centers will take a little longer to set.
Alternatively, you can use two 9″ square pans for the same size thickness.
Why does the middle sink in?
This can be due to the differences in oven temperatures. If the oven is too hot, the butter melts too quickly, causing the cookie to spread without giving it a chance to rise and set up. If the oven is too cold, then you’ll have the same issue in that it won’t rise.
