Fruit Pizza with Cream Cheese Frosting
I am sucker for fruit pizza. If someone brings that for dessert, it’s always my go-to choice, even above striped delight (which is another favorite!).
I shared a brownie fruit pizza a few years back that has been super popular, so I knew I wanted to share a sugar cookie fruit pizza recipe too!
I had no idea coming up with the best fruit pizza recipe would take so many trial runs but it’s tough to get the perfect balance of sweetness in the sugar cookie crust, the cream cheese frosting layer, and the fruit on top.
We tried probably twenty different variations including trying our cream cheese sugar cookies as the crust (delicious as cookies but not a good fit as a crust), our cut out sugar cookies as the crust (too thick!), and a variety of other crusts.
And the cream cheese topping? We tried super sweet, kind of sweet, and not sweet at all.
And we landed on something that all of us decided was the best variation we could come up with. The crust is a little sweeter, the cream cheese frosting is not quite as sweet, and the fruit on the top is well, fruit. The combo together is pretty much pizza perfection.
Why you’ll love this Fruit Pizza
- Quick – this recipe is broken up into three parts that can each be done in a matter of minutes and they’re easy to make ahead of time if you want!
- Chewy crust – the crust has a nice bite to it without being crispy, it’s just kind of the perfect amount of chewy!
- Great for a crowd – cut the slices into whatever size and shape you want to make this work for as many people as you need. Plus, it’s super easy to double or triple as long as you’re up for placing all the fruit!
Ingredients in a fruit cookie pizza
Ingredient Notes
Most of the ingredients in this recipe should be things you have on hand if you like to bake. Here are my recommendations if you are looking for an ingredient substitution.
- Sugar cookie dough – our recipe has just the right amount of sturdiness for a pizza while still being soft. It’s also not too sweet so that the fruit isn’t overpowered. You can substitute any other sugar cookie recipe or pre-made cookie dough if you need to, but the one that’s included in the recipe card is our favorite!
- Cool Whip – you can make your own stabilized whipped cream and use that instead.
- Fruits – this can be any fruit you want from strawberries to kiwi to mango. Avoid using apples or other fruit that browns quickly. Watermelon or anything that is really juicy will make the cookie soggy as well, so I recommend staying away from those!
Recommended tools
Any pizza pan larger that’s 12 inches or larger will work for this. You can use a cookie sheet if you don’t have a pizza pan, but it will change the shape of the fruit pizza from round to rectangle of course!
How to make fruit pizza
This recipe is broken into three basic parts that shouldn’t take more than ten minutes each. Let’s get started!
1 – Make the Cookie Dough
- Preheat the oven to 350 degrees and line a 12 or 16-inch pizza pan with parchment paper.
- In the bowl of a stand mixer or using a hand mixer, combine butter and sugar together until light and fluffy. This can take a couple of minutes – the color should get visibly lighter.
- Add in the egg and mix until well combined.
- Add flour, cream of tartar, baking soda, and salt to the creamed butter mixture and mix until a soft dough forms.
2 – Bake the fruit pizza Sugar Cookie Crust
- Press dough into the center of the parchment paper and gently flatten into a disk.
- Either spread the dough by hand to make a 12-inch circle that is roughly ¼ inch thick or dust the top of the disk with powdered sugar and use a rolling pin to form the shape.
- Bake in the preheated oven for 8-10 minutes or until the dough is slightly golden on the edges and not gooey in the center.
- Remove from the oven and allow the cookie to cool completely.
3 – Make the cream cheese fruit pizza Frosting
- While the cookie is cooling, use a hand mixer to combine softened creamed cheese with Cool Whip in a medium-sized bowl until smooth.
- Add in vanilla and powdered sugar until there are no lumps.
- Cover and store in the fridge until ready to top the cookie.
4 – Assemble and Serve
- Spread the cream cheese topping evenly on top of the cooled sugar cookie, leaving roughly half an inch around the edges to act as the crust.
- Arrange fruit as desired on top of the pizza then place in the fridge until ready to serve.
- Slice the fruit pizza into slices like you would a pizza (but maybe a little smaller because it can be filling!) and serve directly out of the fridge.
How to make a 4th of July Fruit Pizza
Want to turn this into a 4th of July fruit pizza? Simply use all red and blue fruits like strawberries, raspberries, and blueberries!
If you want to make it into a flag, you could double the recipe and bake it on a full cookie sheet as well. Then just top it with the frosting like normal and do red strawberries for the stripes and blueberries for the stars in the corner!
Just like you would with this 4th of July flag cake or these 4th of July cheesecakes!
How to Store Fruit Pizza
Remove fruit from the pizza before storing then top with new fresh fruit to make it taste fresh again. Or if you want to keep the fruit, that’s totally fine as well. It’ll still taste okay, just a little less fresh.
Store the entire pizza in the fridge in an airtight container or loosely wrapped with plastic wrap. This will keep for up to two days in the fridge, after that it starts getting soggy because of the cream cheese frosting.
Removing the fruit as recommended will make it keep longer!
Expert Tips
This can be made ahead of time and assembled right before ready to serve. Simply make each part and store them individually wrapped in the fridge then remove from the fridge an hour before you assemble to serve.
If you have a pan with rounded edges, slide the dough on the parchment paper to a clean surface to roll and shape before placing it on the pizza pan.
If using a hand mixer, the dough may need help coming together. When you see grape-sized clumps of dough stop mixing and finish the dough by combining it by hand.
Make sure your ingredients (the butter and cream cheese) are softened before using them, otherwise you won’t get the same results.
Avoid topping pizza with fruit until ready to serve to keep pizza from becoming soggy.
Recipe FAQs
What fruits are best on fruit pizza?
Some of the best fruits to put on a fruit pizza are berries, mangos, and kiwis. Avoid fruits that brown easily like apples and bananas or are super juicy like watermelon.
Can I make this ahead of time?
Yes! Each part of this fruit pizza can be made a stored for up to a day before being assembled. When ready to serve simply remove it from the fridge for about an hour to soften before assembling the pizza.
I also recommend not adding the fruit until right before serving so it’s not sitting on the crust for more time than necessary!
