We’ve made it! This is the final cookie recipe I’m going to share this year, and I’ve saved the best for last.
Or something like that. Pretty sure these chewy molasses cookies and these orange sugar cookies were also my favorite. I kind of like just cookies apparently.
I grew up in a family that loved Snickers Bars. I don’t even remember when it started by they’ve always been a favorite of my mom’s and my older brothers, so I’ve had a lot of Snickers in my life. And a lot of Snickers poke cake.
Me personally, I’m personally a Twix kind of girl, but Twix don’t melt great in the middle of a cookie, so Snickers cookies it is!
If you like Snickers, you’ll love these cookies. The cookies themselves have the flavor of a Snickers bar and then they’re also stuffed with a mini for that added bonus!
why you’ll love this recipe
- No chill dough – some cookies, like these cut out sugar cookies, require chilling the dough before baking. Not so with these Snickers cookies, you just mix, bake, and eat. Then eat some more.
- Snickers center – the candy bar melts just enough that it’s ooey and gooey in the center of these cookies.
- Soft texture – the surrounding peanut butter cookie is super soft and fluffy. You can also just make these without the Snickers as peanut butter cookies, but that’s a post for another day.
Ingredients
Ingredient Notes
- Snickers – make sure to get miniature Snickers, not the fun size or even full-size. I don’t recommend chopping up a full-size candy bar simply because you won’t have the chocolate coating on all sides, which is part of the yummy chocolate center.
- Butter – make sure you’re using real butter, not a butter substitute. The butter also needs to be softened so take it out of the fridge at least 30 minutes before you’re ready to bake.
- Peanut butter – creamy peanut butter that doesn’t separate (so not the all-natural kind where the oil and nut butter separate with a layer of film on top). If you are using something like all natural, make sure to mix the oil into the peanut butter really well before using.
- Brown sugar – light brown or dark brown sugar works fine in this recipe, make sure it’s lightly packed into your measuring cup for measurements.
Chocolate Glaze Ingredients
You’ll also need the following for the chocolate glaze on top:
- Powdered sugar
- Cocoa powder
- Whole milk
- Salt
Instructions
Preheat your oven to 350°F and line a baking sheet with parchment paper.
First, beat butter, peanut butter, and sugar until light and fluffy then add eggs and vanilla and mix well until it’s well combined.
Combine flour, baking powder, and baking soda then add to the creamed mixture and mix well.
Next you will shape the cookie dough around a miniature Snickers bar forming a ball, making sure Snickers is completely covered by the dough, just like you did with these Rolo cookies.
Place the cookies on a baking sheet at least 1 inch apart so that the cookies have room to spread slightly.
Bake for 10 – 12 minutes until lightly browned on top.
While cookies are baking, mix your ingredients together for the chocolate glaze.
Put chocolate glaze either in a piping bag with a very small tip or in a plastic zipper bag with a very small tip cut off to pipe the glaze on the cookies.
Once cookies are cooked, let them cool for a few minutes on the baking sheet. Use the chocolate bag to drizzle chocolate glaze on the cookies.
Let cool completely then enjoy! And make sure to bite all the way into the center of the cookies to really enjoy the best of these yummy Snickers cookies!
Expert Tips
Skip the salt in the glaze if you’d prefer your cookies to be super sweet. The salt adds a nice contrast to the sweet chocolate but can be left out.
Glaze quickly back and forth over the cookies with consistent pressure to get the seamless look of swirls. If you move slowly, the glaze may break and not look as pretty.
Don’t over bake. The cookies will be done when they’re beginning to turn a light brown color.
Enjoy warm so you can get the best of these cookies with the melted center.
Store in an airtight container, like a plastic container with a lid, or a zipper plastic bag for up to five days.
Recipe FAQs
Can you freeze Snickers cookies?
I don’t recommend freezing these Snickers cookies once baked simply because the inside won’t thaw and give you the caramel center that you’re looking for. You could freeze the dough itself, but it’s so easy to make that it’s probably easier to just make a batch quickly then it is to wait for it to thaw.
Can I use chopped up Snickers bar instead?
Technically yes, if you happen to have a bunch of Snickers from say from Halloween or Easter, you can definitely chop up Snickers bars. You won’t have quite as much chocolate in the center since the chopped up bars won’t be coated on all four sides, but they should still taste okay.
