This easy strawberry punch recipe is perfect for Valentine's Day, Galentine's, or even Mother's Day! The bright strawberry flavored mixed with the perfect amount of fizz gets topped with sherbet for a pink punk that everyone will love!
Add strawberry jello to boiling water and stir until completely dissolved. Pour into a large freezer safe bowl (ideally punch bowl).
Add sugar and cold water to the mixture and stir until sugar is dissolved.
Add pineapple juice to the bowl and mix well. Place the bowl in the freezer for at least four hours, ideally overnight. (This is optional - see notes section).
About 30 minutes before serving, remove the punch from the freezer and let thaw.
Right before serving, add the Sprite to the punch mixture and stir well.
Top with scoops of raspberry sherbet (don't stir) then garnish with sliced strawberries (optional). Serve immediately.
Notes
You don't technically have to freeze the strawberry mixture for this punch to still be tasty - I just prefer to freeze it so that it's nice ice cold without having to use ice. It helps to keep the sherbet from melting too quickly as well, but if you're in a pinch just make sure you're using all chilled ingredients and it should be fine!
